Cinco de Mayo, Fiesta On a Plate

My best friend would tell you I’m “all about holidays”, and she’s right. 

It’s also worth noting that throughout the year, when it nears a holiday, you can get great bargains in the grocery store on food items related to a particular holiday. 

I stock up as soon as ads feature holiday menu sales–because unless you favor specific “healthy diets” (with assorted limitations), you can eat turkey or ham year-round.  And who doesn’t crave Mexican food now and then?  No need to wait till May 5th. 

(If you’re not a taco fan that’s perfectly fine–I’m sharing to ‘most people’… if there’s only a dozen.)

And whether or not you have a drop of Hispanic blood in you, Cinco de Mayo is a fiesta on a plate!

I love refried beans–I cook a grande-size pot and make bean & cheese burritos to freeze, for days when I want an easy-tasty meal with no-meat protein.

It’s a holiday, so I cooked the beans a couple days ago, and the thin-cut steaks and rice yesterday.  Today I added cheese and salsa, wrapped them snug in tortillas and baked ’em.  Okay…maybe that makes them more like enchiladas–who cares?  (I’m not Margarita Stewart)

So if somebody says I’m “full a beans”, today it’s the pure truth!  Now before I need a nap, I’ll salute all the fine folks south of the border in Mexico–Vaya con Dios!!
